Looking through the results for some keywords in this niche, it quickly became clear there’s a massive opportunity for niche sites.

What about the keywords in this niche?
Here’s 3 I found with low competition:

There are hundreds more. Check what the Harley forums I linked to above rank for (here’s how) - most of those keywords are easy.
As I’ve said before, if a forum ranks on the first page, that’s a good sign a niche site can too (as long as the content is good).
Forums don’t have the greatest on-page SEO and aren’t generally seen as “authoritative”.
A niche site can more easily demonstrate authority and follow best practices for on-page SEO.
Another keyword angle is to have a page with specifications and a quick review for every model of Harley Davidson.
Those keywords would be more difficult, but if you use programmatic SEO you can have a page for every model in a matter of days.
This would help tremendously with topical authority and over time, could lead to insane levels of traffic if the pages ranked high.
Okay, moving on.
How’s the monetization potential?
I think the best monetization angle would be ads, followed by affiliate marketing.
There are lots of products and motorcycle accessories you could promote as an affiliate (oil, for example - and yes, people buy oil on Amazon. I know this for a fact :))
Based on the average RPM (revenue per thousand visitors) for automotive sites, I think it’s reasonable to assume a $30 RPM overall (ad and affiliate income combined).
RPM largely depends on what types of keywords you target though (informational or commercial intent).
Given the RPM and my estimated traffic potential (potential = the max traffic I think you could get), the income potential for the Harley Davidson niche is about $15,000/month.
One final thing I like to look at for every niche is the 5-year trend in Google Trends. This tells me whether a niche is seasonal, steady, growing, or declining.
The Harley Davidson niche appears to be somewhat seasonal, peaking in the summer months:
Last thing about this niche: I don’t usually advise people to pick a niche centered around a brand, but would make an exception for major brands that aren’t going away any time soon - like Harley Davidson, car brands, Apple, Google, etc.
Now, onto the bonus niche:

There are tons of low competition informational and commercial intent keywords in the painting niche.
Also, one of the top sites in the niche is PaintTalk, which is a forum. Whatever PaintTalk ranks for should be fairly easy for a niche site to rank for as well.
Monetization: ads and affiliate (ThePaintStore, Amazon Associates).
Monthly traffic potential: 200,000
Estimated RPM (ads + affiliate): $30
Monthly income potential: $6,000
Competition level: Low
5-year trend: Steady
